Girlfriend, It's Just a Storm

 

I had the opportunity of attending a church play that had a friend and her daughter as part of the cast. The title Girlfriend, It's Just a Storm was performed at The Star once known as New Rising Star Baptist Church. 

The play concerns four friends who meet for lunch just to catch up after a number of years being apart. Each friend is experiencing  "a storm" in her life. None share their storm out loud in detail to  the others. Later, we see each one of the characters in her own vignette revealing what her life struggle is.



 Will  Jane's *  breast cancer surgery and reconstruction be successful?  Will her fiancé still want to marry her after such a body and life altering experience?

Between scene changes we were treated with humor by,

As a self-employed business woman, Diane is facing bankruptcy due to the pandemic and a backlog in shipment of merchandise.  This predicament finds her plagued by creditors, utilities in arrears and  repossession of her car.



 Since the death of his brother Shirley's  husband  no longer attends church service  or spends time with her,

 Mary is a hospital worker whose mother has dementia.  The in-home caregiver's own mother has fallen and she'll be leaving immediately to take care of her. This leaves Mary in a dilemma. Who can she get to care for her mother on such short notice? 

In each scene, unseen by the characters, an angel comes to them with news of hope and trust in God telling them they're only going through a storm in life.

The Outcome
Jane*  is cancer free, her reconstruction  a success and her fiancé  still loves her

Diane receives  a letter stating that a rich relative has died leaving her $650,000.

Mary receives a call from the Home Care Service agency stating that they'll be sending out a Home Health Aide the next day along with improved meds for her mother.


Shirley's husband is visited by the angel. He prays and decides to reunite himself with the church and his wife.

When Shirley returns because she forgot her purse, her husband decides to attend church services with her.

When the women reunite each one tells the storms they have experienced and how God made a way and saw them through.

Roasted Cauliflower ,Stems and Greens

 

We all know that grocery prices have skyrocketed. This small head of cauliflower was $2.69 at ALDI.
 

After removing the core, leaves and stems  and saving them, I broke the cauliflower into florets trying to keep them about the same size.  

I tossed the florets in olive oil seasoning with Mrs. Dash, paprika, basil and  garlic powder. Regular salt and pepper will do the trick but, I'm trying to cut back on my sodium intake.

Placing the florets on a heat proof mat sprayed with cooking spray, I placed them in the oven on 400 degrees for about 20-25 minutes. I checked periodically to make sure they weren't burned.
I removed them from the oven, waited for them to cool off enough to eat and dug in. OOOO-delicious. As you can see there weren't many. That browning on the tips is not burning. It adds so much flavor.  I dipped 3 of them  in a tiny bit of Ranch Dressing just to see how it would taste. OOOO-delicious again. 

Next time I'll break them into smaller florets. That way they'll cook faster with even deeper flavor. It'll also appear as if I have more than I do. 😀

But, wait. There's more!
I wanted to know if the leaves and stems were edible. I Googled "cauliflower leaves and stems".

Yes, they are. After all I did pay for the w-h-o-l-e thing and I want to get my $2.69 worth.  I found numerous recipes online. They can be used in soups, stir fried, stocks, salads and even made into cole slaw.

That's what I did with the first cauliflower. The stems can be a little tough but if you peel them the inside is perfect. BUT!, I didn't peel them. After washing the greens and stems thoroughly, I finely chopped everything so that it would be more digestible.

 I put these fixings in a bowl, added mayo,  sweet pickle relish, a little cheese for color along with seasonings of choice and began my consumption.  It was good enough for me to want to make coleslaw with it again. Some of the recipes showed additional ingredients but I preferred to keep it simple. 

I stir fried the next batch along with white onion and seasonings. I added cooked chicken and a little sweet and sour sauce.  It was tasty. 

I didn't add a lot of "stuff" to my recipes since it was my first time trying it out. I didn't want to be disappointed if it didn't turn out to my liking and I would have wasted the additional ingredients for nothing.

Mini Pot Pies

 A pot pie is a comforting food for me but, as with most comfort foods it is laden with calories.

I've been a subscriber to  One Dish Kitchen for some time. Joanie's   recipes for two have been helpful. She provides the directions for making small batches of huge recipes. 

However, the following recipe was on TikTok and I finessed it to fit my own needs. There are only four ingredients.  

As far as measurements and amounts, I have none. I did things "to taste."





The ramekins on the left are 4"x4" and the ones on the right are 5"x5". Each is no deeper than about 
1 1/2". 

I was sated with this small pie which I accompanied with steamed cabbage.  The additional pies were wrapped and placed in the freezer for future meals.

NOTE: Instead of frozen vegetables I will use canned next time. The veggies came out al dente`  since they were still frozen but, the pie was good just the same.  I had crescent roll dough left over. I allowed it to freeze and then placed it in a freezer bag🤞 for a future recipe.
